*in no way authentic; just inspired by mexican food flavors
number of servings depends on how much rice and lentils/chickpeas you use
ingredients:
rice (prepared ahead of time)
lentils or chickpeas (prepared ahead of time)
oil
lime juice
soy sauce
one avocado per person eating the meal
diced veggies at hand, such as:
onion
bell pepper
tomato
potato
spices:
garlic powder
cumin
oregano
paprika
instructions:
prepare rice and lentils/chickpeas if you don't already have leftovers of these ingredients
smash up avocado(s) with lime juice and salt; set aside
if using diced potato, microwave in a bowl until tender (~3 minutes for a small-ish potato)
put some oil in a pan, add some onion and bell pepper; season with garlic powder (and maybe some cumin) and cook over medium or medium-low heat until veggies are softened
if using, add some tomato; continue cooking until softened a bit
if using, add microwaved potato
add lentils (or chickpeas) to pan; i like to add enough so they cover/mostly cover up the veggies
on top of the lentils/chickpeas add as much rice as you want; i usually add enough to cover the lentils/chickpeas
on top of the rice, add soy sauce, lime juice, garlic powder, cumin, oregano, and paprika
combine all ingredients well and cook until hot and tasty, stirring as needed
