fried pasta
serves two hungry people
ingredients:
- pasta (prepared ahead of time; use ~half a box worth)
- olive oil
- lime juice
- diced veggies at hand, such as:
- onion
- carrot
- bell pepper
- zucchini
- tomato
- fresh spinach
- or frozen stir fry veggies
- spices:
- salt & pepper
- garlic powder
- basil
- oregano
instructions:
- prepare pasta if you don't have leftover pasta already
- put some olive oil in a pan, add (if using) some onion, carrot, and bell pepper; season with salt, pepper, and garlic powder and cook over medium or medium-low heat until veggies are softened
- if using, add some tomato and zucchini to the pan; season with a little salt and basil; continue cooking until softened
- if using spinach, add to pan on top of other veggies; drizzle with lime juice and season with salt and garlic powder; combine with other veggies and cook until softened
- add pasta to the pan; drizzle with a little more olive oil and some lime juice; season with salt, pepper, garlic powder, basil and oregano; stir to combine and cook until hot and tasty
note: if using frozen vegetables, just cook them in oil first and then add pasta, seasonings, etc.
